I've been fishing the San Diego fleet for the past 20 years. Being a creature of habit I've used the same processor. This year we were told that our usual place couldn't fit us in so we had to find a different processor. We ended up going with Elite and I am so glad we did. The customer service from A to Z was phenomenal. They were there at the dock on time ready to receive our fish. I could tell instantly they were friendly, professional, and knowledgeable. Usually when we have fish processing done we are stuck in San Diego well into the afternoon. Elite had our fish ready, packed on ice and in our coolers in just a few hours. The packaging was clean and the meat was manicured so well it looked like candy. When I opened my cooler to inspect their work there was not a hint of fishy smell whatsoever. I will be using Elite Fish Processing for all my processing needs moving forward. I highly recommend them.

I went down to San Diego to get in on the BFT bite. We caught a couple fish and needed them processed to fly back to Portland. I typically use 5 Star Fish Processing however they were not answering their phone. I was in a panic so I just started a Google search at the dock and found Elite Fish Processing. They answered the phone and we had a deal. They took the BFT and my cooler. The thing that was a game changer was that they processed my catch and even delivered it to my hotel a few hours later. That is what you call A1 service!!!!! I look forward to using them again.
I had my fish processed with Joel and Chris along with 4 others in my group. They were on time to meet, had great communication, and knew we were itching to get home. They worked quickly without compromising the quality of the tuna we just caught on our 2.5 day. Fish is really well done and ready to eat straight out of the thick and tightly packed bags they used. Would recommend and will definitely use again.
Amazing fish processor. I booked a trip on a San Diego Fisherman's landing boat, but did not try to book a processor until two weeks in advance. EVERY company recommended by the landing told me they were overbooked, but I could take my chances, drop my catch with them at the dock, and come back to San Diego in a couple days, and pick up my fish.
On a deeper search I finally found Elite Fish Processing. The owner used to work for one of the top processors in San Diego, but chose to open a more personal, specialty service who could cater to customers who wanted " a cut above". I called and set up a reservation for my Blue Fin trip. Several other on my boat also had disappointingly received the same "come-back-tomorrow" reply form the landings' recommended processors, and I shared Elite's info with them.
The owner called me at 5am, as my boat was approaching SD harbor, to confirm what I caught, and where to meet ( within 5 minutes of Fisherman's' landing). Even though I told him I did not have the DREAM CATCH of 100lb Blue Fin limits and Yellow tail, he was really supportive and confirmed our meeting, as well as his capacity to accept and process my catch.
After meeting him (he was early) we discussed the details of cleaning, size of shrink-wrap pouches, and timing. He would be able to have everything ready to go in about 2 hours, which was amazing.
His pricing was extremely competitive (especially considering all the "big dogs" basically turned me away). We met exactly at the time & place agreed upon. The fish I caught was cut, shrink wrapped, and labeled in perfect proportions to share with my extended family.
Elite is definitely my "go to" processor for any trip I take out of San Diego.
Outstanding service! My fishing club went on a charter and came home with a boat load of tuna. All the cuts were amazing and the fish was done so quickly. The packaging was really top notch and their labels so easy to read. I can't say enough good things about Joel and his wife. Elite Fish Processing is the only number you'll need when you come home with some fish. Just don't forget to make a reservation! You wouldn't want to get stuck having to go somewhere else.
We called Chris from the boat as soon as we got cell service on our way back in from a two day trip and we met him at the landing. We had guys who wanted their fish processed same day and early morning pick up since they were leaving to go back east. Elite came through!!

We went to get something to eat and take a nap, then Joel called our fish was ready. The whole process was quick and easy. Packaged fish looks fantastic.
